Brownie Brittle™ Strawberry Chiffon Pie

Pie Crust Ingredients:
  • 1 stick melted butter
  • 16 oz (1lb) Brownie Brittle (yields 2 cups of crushed Brownie Brittle)

  • Pie Filling Ingredients:
  • ½ cup strawberry soda
  • 1 pkg sugar-free strawberry Jell-O®
  • ‪‎1 cup cold water
  • •2 ice cubes
  • 1 Tbl lime juice
  • 8 oz CoolWhip® - thawed
  • 2 cups sliced fresh strawberries (reserve ½ cup for garnish)
  • 2 Tbl chocolate chips or chocolate shavings
  • To Prepare:

    For Pie Crust:
    Preheat oven to 350⁰ Fahrenheit.

    Place Brownie Brittle into food processor and pulse until you have crushed Brownie Brittle

    Mix 1 stick of melted butter with the 2 Cups of Brownie Brittle crush.

    Bake the crust for 8-10-minutes. Remove from oven and cool slightly.

    Press into 9” Pyrex® dish and bake for 10-12-minutes.

    Cool completely.

    For Filling:
    In a large microwave safe bowl, heat soda on high about 2.5 minutes until boiling.

    Add Jell-O to hot soda, whisking until dissolved.

    Add cold water, ice and lime juice. Stir until mixture begins to thicken.

    Transfer mixture to room temperature bowl and add whipped topping, whisking until combined. Gently fold in sliced strawberries.

    Spoon mixture into cooled Brownie Brittle crust. Chill in refrigerator about 3 hours or until well set.

    Garnish with strawberries and chocolate chips or shavings.

    Enjoy! Slice and serve.
